Roasted Broccoli Parmesan Toast


Don't Look Back

After roasting broccoli and topping it with tart lemon and buttery parmesan cheese, you may never go back to plain jane broccoli again.

  • SERVES: 4


  1. Preheat the oven to 425°F and grease a large baking sheet with cooking spray.
  2. In a large bowl, toss the broccoli with the olive oil and season with salt and pepper.
  3. Spread the broccoli out on the prepared baking sheet in a single layer. Roast for 20 minutes, until broccoli is crispy.
  4. Remove and immediately toss with the Parmesan cheese and lemon juice. Season with additional salt and pepper.

  • 1 (10 oz) bag broccoli florets
  • 2 Tbsp. olive oil
  • Salt & pepper for seasoning
  • 2 Tbsp. grated Parmesan cheese
  • 2 Tbsp. lemon juice
  • 4, ½" thick slices potato bread
  • 4 oz garlic & herb cream cheese

  1. Using the toaster, adjust the browning control to setting 4 and place 2 slices of bread in the toasting slots. Press the lever down fully to begin toasting cycle. Repeat with remaining slices.
  2. Spread the cream cheese among the toast slices and top with the roasted broccoli.
  3. Eat warm.
