Cinnamon Cottage Cheese and Peach Toast

Warm gooey peaches sit atop cool cinnamon-y cottage cheese for an old-school treat that takes you back to your childhood.

Directions

  1. Set oven to broil and line a baking sheet with aluminum foil.
  2. In a small bowl, stir together the cottage cheese and cinnamon. Cover and place in the refrigerator to chill.
  3. In a large bowl, toss together the peaches, brown sugar and butter. Spread in an even layer on the prepared baking sheet.

  • 1 cup small curd cottage cheese
  • 1 Tbsp. cinnamon
  • 1½ cups sliced peaches
  • 2 Tbsp. brown sugar
  • 1 Tbsp. butter, melted
  • 4 slices cinnamon raisin bread
  • Honey for drizzling

  1. Broil the peaches for 4-5 minutes, until caramelized.
  2. Meanwhile, using the toaster, adjust the browning control to setting 4 and place two slices of bread in the toasting slots. Press the lever down fully to begin toasting cycle. Repeat with remaining slices.
  3. Spread the cottage cheese mixture among each toast slice and top with the broiled peaches. Drizzle with honey and enjoy!
