Mum's Creamy Scrambled Eggs on Avacado Toast

Kate's Avocado Toast:

  1. Using a RUSSELL HOBBS Toaster toast two slices of bread to desired darkness
  2. While toasting, cut a ripe avocado in half, removing the pit
  3. Using a knife, cut the flesh of each half of the avocado into slices, using a fork to lay them on either side of the toast
  4. Top avocado with recipe for Mum's Cream Eggs, or egg cooked to your preference
  5. Finish with a sprinkle of sea salt and red chili flakes

Mum's Creamy Scrambled Eggs:

  1. Lightly beat together eggs and season gently, to taste, with salt and freshly ground black pepper
  2. Melt butter in a saucepan, add the beaten eggs and stir gently through on a low heat, while the eggs scramble, cooking the eggs only until they start to firm up, ensuring they remain creamy and not dry

Serving Tips:

  • Add sliced cherry tomatoes, basil, and balsamic vinegar to avocado
  • Add hot sauce, Sriracha, or sambal oelek, and squeeze a slice of lemon to avocado
  • Add bacon, lettuce, tomato to avocado making it “ABLT”
  • Mash avocado, adding diced tomatoes, onion, cilantro, cumin, salt and pepper, and top with eggs
  • Add small pieces of smoked salmon to eggs
  • Add fresh herbs like tarragon and dill, or fresh basil and garlic to eggs
